Chicken couscous salad

A yummy recipe inspired from our trips to Morocco...

Chicken couscous salad

You will need

500 gr. / 2 cups couscous

200 gr. / 7 oz. chicken breasts (cut into cubes)

20 cherry tomatoes

10 grilled peppers (yellow and red)

1 bunch of fresh parsley

fresh mint (more or less depending on your taste)

Juice of 1 lemon

Olive oil

Salt and pepper to taste

Start by preparing the couscous by following the instructions on the pack. Set aside to cool down.

Grill the chicken until golden, set aside to cool down. Cut the cherry tomatoes and the peppers, the parsley and mint leaves.

Put all the ingredients together, mix well and add the lemon juice, olive oil, salt and pepper.
