Zucchini, Feta and Chili Bruschetta

This is one of our fav go-to recipe for spring and summer, easy, fresh, healthy and super fast to make...

 

Zucchini, Feta and Chili Bruschetta

You will need

2 zucchini, thinly sliced with a mandolin

3 red radish, thinly sliced with a mandolin

2 small red chilis, thinly sliced (I used dry ones)

2 cloves garlic, sliced (I used garlic powder, less strong…)

1/2 spring onion

1 tablespoon lemon zest

sea salt and cracked black pepper

80 ml (3 ounces) olive oil

4 slices sourdough bread, char-grilled

150g (5 ounces) feta, sliced

Mix the zucchini, chili, garlic powder, onion, lemon zest and feta. Season with salt and pepper, add olive oil and set aside while toasting the bread, let it cool and place the ingredients on top, serve immediately.
