Late Summah Bruschetta

Nothing says summer in Italy like fresh produce. We love this beautiful time of year and find endless inspiration in serving something fresh and simple with a crisp glass of #yeswayrose al fresco on a July evening!

Tomato and basil bruschetta (the original Italian version)

Ingredients
(Serves 4-6 people as an light antipasto)

4 large, thick slices, each cut in half, or 8 small slices, of rustic bread or baguette
Extra virgin olive oil, preferably of the deep green, fruity kind
Salt

For the tomato topping:
4 medium sized tomatoes, de-seeded and cut into rough cubes
A handful of fresh basil, torn into small pieces
A good pour of olive oil
Salt and pepper, to taste

Serve immediately with a nice bottle of white or rosé wine... Buon Appetito!
