Macarons à la vanille

 

Ah Paris! Macarons are as French as red wine and we love to nibble these little babies everytime we are in the city of light. These little nuggets are just too good not to try to make at home! the filling is totally up to you but our favorite is VANILLA. They are easier than you might think… go ahead and impress all your lovahs with this easy recipie!

You will need

125G (4.5 OZ) almond powder

200G (7 OZ) icing sugar

3 egg whites

1 vanilla pod

30G (1 OZ) powder sugar

(for the filling)

80G (3 OZ) butter

1 tbsp vanilla extract

125G (4.5 OZ) white chocolate

Sieve the icing sugar and mix will with the almond powder. In a bowl, whip the egg whites with an electric mixer, add the pinch of salt and gradually add the sugar until you get a thick meringue.

Add half of the icing sugar and almonds and stir in gently with a spatula from top to bottom. Add the vanilla sugar and the rest of the icing sugar-almond mix and stir until blended.

Pre-heat the oven at 150C (300F). Pour the paste in an ovenproof plate covered with baking sheet. Allow resting at room temperature about 30-35 minutes (this is a very important step!), the macaroons must build a crust before going into the oven.

Cook for 20-25 minutes until the macaroons are firm to touch. While they cool, prepare the filling. In a pan (or microwave), melt the chocolate and butter, add the vanilla extract and let cool to thicken.
